I just learned how to make a simple syrup, for use in making homemade sodas. I can't believe that it took me so long to get around to learning this. It's embarrassingly easy. Just melt a crap-ton of sugar into some water. Done. But now you can customize the flavors! The first flavor I learned to make is Basil-Lemon. Yum yum yum! I learned this from my new favorite blogger Linda Ly at www.gardenbetty.com. She's the bomb.
This syrup could not be easier- mix 4 cups water, 3 cups sugar, 4 packed cups of basil, and one lemon, juiced, with rind. Bring to boil, until sugar is dissolved, then move away from heat and place lid on top. In an hour, it will be time strain, and you are all done! Mix with club soda or seltzer water- 3 parts soda to 1 part syrup. This was so tasty, I actually did a happy dance in the middle of the kitchen. Damn. I cannot WAIT to play with this, and make more flavors! Pineapple-rosemary. Cherry-ginger. Orange. Apple-cinnamon. Blueberry-lavender. I could keep going.
